Disinfecting

You can disinfect in the following four ways:

  1. Use boiling water.
  2. Use a chemical disinfectant.
  3. Use a sanitiser.
  4. Use a dishwasher.

When using a disinfectant or sanitiser, check the label to make sure that it is appropriate for the job in hand.

When using chopping boards, the most effective way to clean and disinfect most catering chopping boards is to put them in the dishwasher.

It is important to keep your kitchen clean by cleaning as you go. If food is spilt, clean it up right away and then clean the surface thoroughly to avoid bacteria spreading.

Allow enough time at the end of each working day to thoroughly clean the kitchen so it is ready for the next shift. All surfaces and equipment that come into direct contact with food are a priority. Remember to clean the walls, floors and storage areas frequently as well.
