Basic Food Hygiene

Cleaning Plates, Dishes & Utensils

A dishwasher is an effective way to ensure that dishes, glasses and equipment are cleaned thoroughly. Dishwashers are highly effective because they use very hot water, which kills all bacteria. It is important to remove obvious food and dirt before putting items in the dishwasher.

Ensure the dishwasher is working correctly and that the water is hot enough. If you are washing dishes and utensils by hand, follow the steps below:

  • Remove all obvious food and dirt.
  • Clean with hot water and washing-up liquid.
  • Rinse with clean water to remove cleaning chemicals.
  • Dry naturally if possible.

If it is not possible to leave items to dry naturally, always use a clean tea towel and change towels at least once a day. Always follow these points when washing dishes:

  • Wash items with the least dirt first, such as glasses.
  • Use fresh washing-up water when it gets dirty.
  • Replace all cleaning fabrics such as scourers and dish cloths frequently.
